Feenin for Watermelon Feta Salad
6 cups watermelon, cut into cubes (roughly half a small watermelon)
1 1/2 cups Greek feta, rough chopped
1 cup Kalamata olives, pitted and halved
1/4 cup basil leaves, cut chiffonade (tiny thin ribbons)
3 tablespoons olive oil
1 tablespoon balsamic vinegar
Cut and prepare the ingredients for the salad. To mix the vinaigrette, whisk the balsamic into the olive oil until emulsified. 20 – 30 minutes before serving, toss the ingredients together and lightly dress the salad. Serve garnished with basil leaves.

Savory Salivating
Summer Time Salad
Avocado and Tomato Salad with a Citrus Twist
Ingredients:
2 medium tomatoes, chopped
1 avocado, chopped
1 tablespoon olive oil
1/4 cup diced red onion
1 teaspoon lemon juice
1 tablespoon balsamic vinegar
salt and freshly ground black pepper, to taste
Preparation:
1. Combine all the ingredients in a small bowl and toss together.
2. Let stand for about 5-10 minutes before serving.
I may add my own twist and add some fresh spring salad mix.
Maybe use some of my George's Greek Salad Dressing (AMAZING!)
instead of the balsamic. Just a thought...
